I think I've confessed this before, but I'll say it again: I'm a wannabe foodie. Love to eat and try new things. Some of my favorite blogs have a food component like Bakerella and The Pioneer Woman. I think I even indulged in a subscription to Cooking Light once upon a time. My actual skills in the kitchen - meh, not so much. I'm pretty sure I was engaged a very short time before someone started asking if H knew what he was in for when it came to my cooking.
Thank goodness for cookbooks. Follow a recipe, I can do. The Good Home Cookbook contains more than 1,000 classic American recipes and bills itself as the only cookbook entirely tested in home kitchens across America. This piqued my interest a bit, as Richard J. Perry states in his introduction: "What is a classic American recipe? ...a recipe that has been handed down from generation to generation in various forms, from cookbooks to menus - recipes that have withstood the test of time." Home cooking can mean so many things to so many people. Whether it's Grandma's pasta, or Dad's burgers on the grill.
I like the organization of this book. Chapters group the recipes by Breakfast, Lunch, Salads, Meat, Soups, Vegetables, Pies Cakes and Cookies, and more. I'm usually trying to wrap my brain around a particular meal, so I think this would be helpful. There are various appendices that get into more technical stuff such as canning and pickling, freezing and thawing and so forth.
Just a quick flip into the book has my taste buds dancing over a yummy-sounding breakfast frittata, which even has suggested variations of broccoli, spinach and herb, and goat cheese. Many recipes begin with a tiny paragraph (or less) describing the dish and sometimes it's origin, which tickles the storyteller in me as well.

When my son was a toddler, macaroni and cheese worked for us. I could assemble it during naptime, then refrigerate until it was time to bake it off. We also add broccoli and/or carrots to the mixture.

A no fail recipe at our house is taco salad...this gets lots of happy faces when we have it. Also another favorite is Friday Night Pizza Night. We make our own pizza and watch a movie. It's an easy supper and a relaxing way to end the week. Not alot of clean up either!!!

I like bars (haha)- salad bars, taco bars, pizza bars, sandwich bars etc.
Just set out the toppings and make it yourself. Toddlers love "Being in charge" and adults love getting to actually have food with 'grown-up' ingredients. For salad, tacos and sandwiches the meals done- for pizzas I just ww pita bread and just pop it in the oven for 10 minutes.
We grill a lot right now. Mostly chicken with a marinade, and yellow or green squash. When pressed for time, we have quesadillas. I always have tortillas on hand - with some refried beans, chicken, tomatoes, and cheese, dinner is done!
Our favorite is the "cold soup" made from fresh vegetables

I love making hamburger patties with sliced potatoes and onions add salt, pepper, ect. cover and cook in oven for about 45 minutes. A great meal in little time and mess...

Whenever we have spaghetti, I make sure to make extra pasta. My husband always gets super excited, because he knows the night after spaghetti night is stir fry night! I just add some garlic, carrots, cabbage & tofu to the noodles and mix it all up in a wok with some seasoning and soy sauce. It's a big hit with my man; he absolutely loves it! And of course that makes me feel good! :)
My family loves "kitchen soup"; whatever vegetables are available get added to the pot along with ground beef, fresh ground pepper and macaroni. My personal favorite is meat loaf, my husband makes better meatloaf than I do! Thanks
